Ingredients
- For the peach filling:
4 cups fresh or canned peaches, peeled and sliced (if using canned, drain and rinse)

1 tablespoon lemon juice
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon cornstarch (to thicken)

1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup unsalted butter, cold and cubed
1/4 cup milk
1/2 teaspoon vanilla extract (optional)

Instructions
For the Peach Filling:
Peel and slice fresh peaches or drain canned peaches. Combine peaches, sugar, lemon juice, cinnamon, nutmeg, and cornstarch in a saucepan. Simmer over medium heat for 5-7 minutes until the mixture thickens. Stir in vanilla extract. Spoon the filling into 6-8 oven-safe cups or ramekins.
- For the Topping:
Mix flour, sugar, baking powder, and salt in a bowl. Add cubed cold butter and cut it into the flour mixture until it resembles coarse crumbs. Add milk and vanilla extract, stirring until the dough comes together. - Top the Peaches:
Drop spoonfuls of the biscuit dough over the peach filling, covering most of the peaches. The biscuit topping will spread as it bakes. - Bake the Cobbler Cups:
Preheat the oven to 375°F (190°C). Place the cups on a baking sheet and bake for 20-25 minutes, or until the biscuit topping is golden brown and the peach filling is bubbly. - Cool and Serve:
Allow the cobbler cups to cool slightly before serving. Garnish with whipped cream or vanilla ice cream if desired.
