Description

Peach Cobbler Cups are individual-sized, comforting desserts with a warm, cinnamon-spiced peach filling and a buttery, biscuit-like topping. They’re perfect for any occasion and easy to make.

Ingredients

  1. For the peach filling:
4 cups fresh or canned peaches, peeled and sliced (if using canned, drain and rinse)
1/4 cup granulated sugar (adjust based on the sweetness of the peaches)
    1 tablespoon lemon juice
    1 teaspoon ground cinnamon
    1/4 teaspoon ground nutmeg
    1 tablespoon cornstarch (to thicken)
    1/2 teaspoon vanilla extract
    For the topping:
    1 cup all-purpose flour
    1/4 cup granulated sugar
    1/2 teaspoon baking powder
    1/4 teaspoon salt
1/4 cup unsalted butter, cold and cubed
    1/4 cup milk
    1/2 teaspoon vanilla extract (optional)
    Optional garnish:
Whipped cream or vanilla ice cream

Instructions

For the Peach Filling:
Peel and slice fresh peaches or drain canned peaches. Combine peaches, sugar, lemon juice, cinnamon, nutmeg, and cornstarch in a saucepan. Simmer over medium heat for 5-7 minutes until the mixture thickens. Stir in vanilla extract. Spoon the filling into 6-8 oven-safe cups or ramekins.

  1. For the Topping:
Mix flour, sugar, baking powder, and salt in a bowl. Add cubed cold butter and cut it into the flour mixture until it resembles coarse crumbs. Add milk and vanilla extract, stirring until the dough comes together.
  2. Top the Peaches:
Drop spoonfuls of the biscuit dough over the peach filling, covering most of the peaches. The biscuit topping will spread as it bakes.
  3. Bake the Cobbler Cups:
Preheat the oven to 375°F (190°C). Place the cups on a baking sheet and bake for 20-25 minutes, or until the biscuit topping is golden brown and the peach filling is bubbly.
  4. Cool and Serve:
Allow the cobbler cups to cool slightly before serving. Garnish with whipped cream or vanilla ice cream if desired.

Notes

  • For a berry medley, mix blueberries, raspberries, or blackberries with the peaches.
  • To make it gluten-free, use a gluten-free flour blend for the topping.
  • To add extra flavor, try adding a pinch of ground ginger or allspice to the peach filling.
