Description

Ingredients

  1. For the fruit filling:
    4 cups fresh peaches, peeled and sliced

    ¾ cup buttermilk (or milk)
    1 tsp vanilla extract

Instructions

Preheat the oven to 375°F (190°C).

  1. Prepare the fruit filling: In a large bowl, combine sliced peaches, raspberries, sugar, lemon juice, cornstarch, and cinnamon (if using). Gently toss until the fruit is coated. Pour the mixture into a greased 9×9-inch baking dish.
  2. Prepare the cobbler topping: In a medium bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon (if using). Add the cold butter and cut it into the dry ingredients until the mixture resembles coarse crumbs. Stir in buttermilk and vanilla extract until just combined.
  3. Assemble the cobbler: Spoon the cobbler batter over the fruit filling in dollops. The batter doesn’t need to cover the entire surface—it will spread as it bakes.
  4. Bake the cobbler in the preheated oven for 40-45 minutes, or until the topping is golden brown and firm, and the fruit is bubbling. If the topping starts to brown too quickly, loosely cover with foil and continue baking until the fruit is fully cooked.
  5. Cool slightly and serve: Allow the cobbler to cool for about 10 minutes before serving. Best served warm.
