Ingredients
- 2 1/4 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- 1/4 tsp almond extract (optional)
- 1/2 cup pastel rainbow sprinkles (jimmies or confetti style)
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, cream the softened butter and sugar until light and fluffy.
- Add the egg, vanilla extract, and almond extract (if using). Beat until well combined.
- Gradually mix in the dry ingredients until a soft dough forms.
- Fold in the pastel sprinkles until evenly distributed.
- Scoop dough into tablespoon-sized balls and place on the prepared baking sheet, spacing about 2 inches apart.
- Slightly flatten each dough ball with your fingers or the bottom of a glass.
- Bake for 10–12 minutes, or until edges are lightly golden and centers are set.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Use jimmies or confetti sprinkles to prevent color bleeding in the dough.
- No chilling required, but you can chill dough for 15 minutes to reduce spreading.
- Use a cookie scoop for evenly sized cookies.
- Add lemon zest, chocolate chips, or colored dough for extra flair.
