Description

Pasta Puttanesca is a bold and flavorful Italian dish made with a rich tomato sauce, briny olives, capers, and anchovies. Ingredients

  • 12 oz spaghetti or preferred pasta
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/4 tsp red pepper flakes (adjust to taste)
  • 6 anchovy fillets, chopped (optional)
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup pitted Kalamata olives, chopped
  • 2 tbsp capers, drained
  • 1/4 cup fresh parsley, chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain, reserving 1/2 cup of pasta water.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes, sauté for 1-2 minutes until fragrant.
  3. If using anchovies, add them and cook for another 2 minutes, stirring occasionally.
  4. Pour in crushed tomatoes, olives, and capers. Stir well and let simmer for 10-15 minutes. Season with salt and pepper to taste.
  5. Add cooked pasta to the sauce, tossing to coat. If needed, add a splash of reserved pasta water to loosen the sauce.
  6. Garnish with fresh parsley and serve immediately.
