Description

Panna Cotta is a creamy Italian dessert made from cream, milk, and sugar, set with gelatin to create a smooth, silky texture. It’s typically served with fruit compote, berries, or caramel, and is a versatile, make-ahead treat.


Ingredients

  1. 2 cups heavy cream
  2. 1 cup whole milk
  3. ½ cup granulated sugar
  4. 1 tablespoon vanilla extract (or 1 vanilla bean, split and scraped)
  5. 2 teaspoons powdered gelatin
  6. 3 tablespoons cold water
  7. 1 ½ cups mixed berries (strawberries, raspberries, blueberries, etc.)
  8. ¼ cup granulated sugar (for compote)
  9. 1 tablespoon lemon juice (optional for compote)

Instructions

For the panna cotta, sprinkle gelatin over cold water and let bloom for 5 minutes. In a saucepan, heat cream, milk, and sugar until hot but not boiling. If using a vanilla bean, scrape seeds and add both seeds and pod to the cream mixture. Remove from heat and dissolve gelatin into the cream mixture. Stir in vanilla extract if using.

  1. Strain the mixture through a fine-mesh sieve to remove the vanilla pod or any seeds, then pour into individual cups or ramekins. Let cool, then refrigerate for at least 4 hours or until set.
  2. For the compote, cook mixed berries with sugar and lemon juice over medium heat for 5-7 minutes until fruit softens and mixture thickens. Let cool to room temperature, then refrigerate until ready to serve.
  3. To serve, run a knife around the edge of the ramekins to loosen, dip in warm water, and invert onto plates. Top with fruit compote or fresh berries.

Notes

  • Panna cotta can be made ahead of time and stored in the fridge for up to 3-4 days.
  • For a vegan version, replace heavy cream with coconut milk and use agar-agar instead of gelatin.
