Description
Panna Cotta is a creamy Italian dessert made from cream, milk, and sugar, set with gelatin to create a smooth, silky texture. It’s typically served with fruit compote, berries, or caramel, and is a versatile, make-ahead treat.
Ingredients
- 2 cups heavy cream
- 1 cup whole milk
- ½ cup granulated sugar
- 1 tablespoon vanilla extract (or 1 vanilla bean, split and scraped)
- 2 teaspoons powdered gelatin
- 3 tablespoons cold water
- 1 ½ cups mixed berries (strawberries, raspberries, blueberries, etc.)
- ¼ cup granulated sugar (for compote)
- 1 tablespoon lemon juice (optional for compote)
Instructions
For the panna cotta, sprinkle gelatin over cold water and let bloom for 5 minutes. In a saucepan, heat cream, milk, and sugar until hot but not boiling. If using a vanilla bean, scrape seeds and add both seeds and pod to the cream mixture. Remove from heat and dissolve gelatin into the cream mixture. Stir in vanilla extract if using.
- Strain the mixture through a fine-mesh sieve to remove the vanilla pod or any seeds, then pour into individual cups or ramekins. Let cool, then refrigerate for at least 4 hours or until set.
- For the compote, cook mixed berries with sugar and lemon juice over medium heat for 5-7 minutes until fruit softens and mixture thickens. Let cool to room temperature, then refrigerate until ready to serve.
- To serve, run a knife around the edge of the ramekins to loosen, dip in warm water, and invert onto plates. Top with fruit compote or fresh berries.
Notes
- Panna cotta can be made ahead of time and stored in the fridge for up to 3-4 days.
- For a vegan version, replace heavy cream with coconut milk and use agar-agar instead of gelatin.
- You can flavor panna cotta with extracts like almond or hazelnut for a different twist.
