Description

This Orange Creamsicle Pie is a refreshing no-bake dessert that combines a crunchy graham cracker crust with a creamy, orange-flavored filling made from instant vanilla pudding mix and orange soda. Topped with whipped cream and fresh or canned orange slices, it captures the nostalgic flavors of a classic creamsicle in pie form, perfect for summer gatherings or anytime you want a light and citrusy treat.

Ingredients

Crust

  • 12 graham crackers
  • ½ cup (1 stick) unsalted butter
  • 2 Tablespoons light brown sugar, packed (or white granulated sugar)

Filling

  • 1 ½ cups cold orange soda
  • 3.4 ounce box instant vanilla pudding mix
  • 1 (8 ounce) tub whipped topping, thawed (Cool Whip or store brand)

Topping

  • Additional whipped topping (optional)
  • Orange slices (fresh or mandarin orange slices from the can, drained well)

Instructions

  1. Prepare the crust: Process the graham crackers into fine crumbs using a food processor. Add the unsalted butter and light brown sugar, then pulse until the mixture resembles sand. If you don’t have a food processor, crush the graham crackers in a Ziploc bag with a rolling pin and mix with the butter and sugar manually.
  2. Form and chill crust: Spray a standard pie dish with nonstick cooking spray. Press the crust mixture firmly into the bottom and up the sides of the dish. Place the crust in the refrigerator for 30 minutes to set.
  3. Make the filling: In a bowl, whisk together the cold orange soda and instant vanilla pudding mix until smooth and thickened.
  4. Combine filling with whipped topping: Gently fold the thawed whipped topping into the pudding mixture until fully combined. Cover with plastic wrap and refrigerate until the crust has chilled 30 minutes.
  5. Assemble the pie: Remove the crust and filling from the refrigerator. Spread the filling evenly into the chilled crust.
  6. Freeze to set: Cover the pie with plastic wrap and freeze for at least 6 hours or overnight to allow the filling to fully set up.
  7. Add toppings and serve: When ready to serve, remove the pie from the freezer. Top with additional whipped topping and arrange orange slices on top. Let the pie thaw for about 20 minutes before slicing and serving.

Notes

  • If you don’t have a food processor, crushing graham crackers in a bag with a rolling pin works well for the crust.
  • You can use mandarin oranges from a can; just be sure to drain them well before topping the pie.
  • The pie needs to freeze fully to set, so plan ahead for at least 6 hours of freezing time.
  • Letting the pie sit at room temperature for 20 minutes before serving makes slicing easier.
