Instructions
- Prepare the Crust: Line a 10-inch springform pan with parchment paper and spray with nonstick cooking spray. Crush or blend the graham crackers until finely ground, then combine with the light brown sugar. Stir in the melted butter until fully combined. Press the mixture evenly into the bottom of the prepared pan using a flat-bottomed glass or measuring cup to compact firmly.
- Make Orange Cream Cheese Layer: In a large bowl, dissolve the orange gelatin into ¾ cup boiling water, then add ¼ cup cold water and stir well. In a separate bowl, beat the cream cheese until smooth and creamy. Add the sweetened condensed milk and fresh orange juice, mixing until combined. In another bowl, beat heavy cream until stiff peaks form, then blend in powdered sugar. Add the orange zest and optional orange food coloring to the cream cheese mixture. Gently fold the whipped cream into the cream cheese mixture, then stir in the dissolved gelatin mixture. Spread this layer evenly over the prepared crust and refrigerate for 2 hours to set.
- Make Cheesecake Layer: Beat the cream cheese until creamy, then add the sweetened condensed milk and beat until smooth. Separately, beat the heavy cream until stiff peaks form and combine it with powdered sugar. Sprinkle unflavored gelatin over 3 tablespoons cold water in a microwave-safe bowl and let it bloom for 2 minutes. Microwave on high for 30 seconds, stir to dissolve gelatin completely, then let cool slightly for 2 minutes. Beat in vanilla extract and then the dissolved gelatin into the cream cheese mixture. Carefully fold in the whipped cream and spread this cheesecake layer evenly over the orange cream cheese layer. Refrigerate for another 2 hours to firm up.
- Prepare Orange Jello Layer: Dissolve the orange flavored gelatin in 1 cup boiling water and stir until fully dissolved. Add ½ cup cold water and stir to combine. Gently spoon this orange gelatin mixture over the set cheesecake layer. Return the assembled cheesecake to the refrigerator and chill for a minimum of 2 hours to fully set the top layer.
- Serve: Remove the cheesecake from the refrigerator, allow it to sit at room temperature for 5 minutes before unmolding from the springform pan. Decorate with whipped cream, fresh orange slices, and mint leaves as desired before serving.
Notes
- This is a no-bake cheesecake, so it requires refrigeration to set rather than baking.
- Using fresh orange juice and zest enhances the natural citrus flavor for a more authentic creamsicle taste.
- The optional orange food coloring is purely for visual appeal and can be omitted if desired.
- Ensure cream cheese is room temperature to avoid lumps in the mixture.
- Chilling times are critical to allow each layer to set properly before adding the next.
- Make sure gelatin is fully dissolved and slightly cooled before adding to cream cheese mixtures to prevent curdling.
