Ingredients

Brownie Bites

  • 10 tablespoons unsalted butter
  • 1 cup granulated sugar
  • ⅔ cup unsweetened cocoa powder
  • ½ teaspoon orange extract
  • ¾ teaspoon salt
  • 2 large eggs
  • ½ cup all-purpose flour
  • ½ cup mini chocolate chips (optional)

Chocolate Orange Frosting

  • 10 tablespoons unsalted butter
  • 2/3 tablespoons unsweetened cocoa powder
  • 1 teaspoon orange extract
  • 2 – 4 tablespoons milk
  • 3 cups confectioners’ sugar


Instructions

  1. Preheat and Prepare Pans: Preheat the oven to 350°F (177°C). Spray the tins of a 24-cup mini muffin pan or a 12-cup muffin pan with non-stick cooking spray to prevent sticking.
  2. Melt Butter and Mix Dry Ingredients: In a medium saucepan, melt 10 tablespoons of unsalted butter over medium heat. Stir in 1 cup sugar, ⅔ cup cocoa powder, ½ teaspoon orange extract, and ¾ teaspoon salt. Remove from heat and let the mixture cool for 5 minutes.
  3. Add Eggs and Flour: Quickly whisk in 2 large eggs until well combined. Add ½ cup all-purpose flour and stir until mostly combined, then fold in ½ cup mini chocolate chips if using, stirring until no flour streaks remain.
  4. Scoop Batter and Bake: Spoon the batter evenly into the prepared muffin tins. Bake for 12 to 15 minutes if using the 24-cup mini muffin pan, or 15 to 20 minutes for the 12-cup muffin pan, until brownies are set and the tops are cracked and shiny.
  5. Cool Brownies: Let the brownie bites cool in the pan on a wire rack for 10 minutes. Carefully remove them using the tip of a knife and finish cooling completely on the wire rack.
  6. Prepare Frosting: In a large heatproof bowl, microwave 10 tablespoons butter and 2/3 tablespoon cocoa powder until butter is melted. Beat with a hand mixer until smooth. Add 1 teaspoon orange extract and 2 to 4 tablespoons milk, stirring to combine.
  7. Add Confectioners’ Sugar: Gradually add 3 cups confectioners’ sugar, stirring slowly at first to combine, then beat on medium speed for about 1 minute until frosting is smooth and creamy.
  8. Frost the Brownie Bites: Immediately frost the cooled brownie bites with the chocolate orange frosting. Optionally, top each with a mini mandarin orange slice for garnish.
