Ingredients

1 pound ground beef
3 garlic cloves, minced
2 cartons (32 ounces each) reduced-sodium beef broth
2 cans (14.5 ounces each) diced tomatoes with green pepper, celery, and onion, undrained
1 teaspoon dried basil
½ teaspoon dried oregano
½ teaspoon pepper
¼ teaspoon salt
3 cups uncooked bow tie pasta
4 cups fresh spinach, coarsely chopped
Grated Parmesan cheese for serving


Instructions

  1. In a 6-quart stockpot, cook the ground beef and minced garlic over medium heat until the meat is no longer pink, about 6–8 minutes. Break the beef into crumbles as it cooks; drain excess fat.
  2. Stir in the beef broth, diced tomatoes (with their juices), dried basil, dried oregano, pepper, and salt. Bring the mixture to a boil.
  3. Add the uncooked bow tie pasta to the pot. Return to a boil and cook, uncovered, until the pasta is tender, approximately 7–9 minutes.
  4. Stir in the chopped fresh spinach and cook until wilted.
  5. Ladle the soup into bowls and sprinkle with grated Parmesan cheese before serving.
