Ingredients
- 1 1/2 tablespoons olive oil
- 2 garlic cloves, finely minced
- 1 onion, finely chopped
- 500g (1 lb) ground beef
- 2 teaspoons Italian herbs
- 2 tablespoons tomato paste
- 400g (14 oz) can crushed tomatoes
- 1/2 teaspoon red pepper flakes (optional)
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 4 cups (1 liter) low-sodium chicken stock
- 350g (12 oz) short pasta (fusilli, penne, or elbow macaroni)
- 3/4 cup heavy cream
- Parmesan cheese, finely grated (for serving)
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Sauté Aromatics: Heat olive oil in a large pot over high heat. Add garlic and onion, cooking for 1.5 minutes until fragrant.
- Cook Beef and Seasonings: Add ground beef, breaking it up as it cooks until no longer pink. Stir in Italian herbs, then mix in tomato paste and cook for 1 minute.
- Incorporate Liquids and Pasta: Pour in crushed tomatoes, chicken stock, salt, black pepper, and red pepper flakes (if using). Stir well, then add pasta, ensuring it is submerged.
- Cook Pasta: Bring to a boil, then reduce heat to medium-low. Cover and simmer for 10 minutes, stirring occasionally, until pasta is al dente and liquid is mostly absorbed.
- Add Cream: Stir in heavy cream and let the sauce simmer for 2 more minutes until thickened.
- Serve: Remove from heat and serve with grated Parmesan and fresh parsley if desired.
Notes
- Swap ground beef with ground turkey or sausage for a variation.
