Indulge in a hearty and comforting meal with this One Pot Creamy Tomato Beef Pasta. This dish features tender pasta, flavorful ground beef, and a rich, creamy tomato sauce—all made in a single pot for easy cleanup. Perfect for busy weeknights, this family-friendly recipe delivers bold Italian flavors with minimal effort.

Ingredients

  • 1 1/2 tablespoons olive oil
  • 2 garlic cloves, finely minced
  • 1 onion, finely chopped
  • 500g (1 lb) ground beef
  • 2 teaspoons Italian herbs
  • 2 tablespoons tomato paste
  • 400g (14 oz) can crushed tomatoes
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 4 cups (1 liter) low-sodium chicken stock
  • 350g (12 oz) short pasta (fusilli, penne, or elbow macaroni)
  • 3/4 cup heavy cream
  • Parmesan cheese, finely grated (for serving)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  • Sauté Aromatics: Heat olive oil in a large pot over high heat. Add garlic and onion, cooking for 1.5 minutes until fragrant.
  • Cook Beef and Seasonings: Add ground beef, breaking it up as it cooks until no longer pink. Stir in Italian herbs, then mix in tomato paste and cook for 1 minute.
  • Incorporate Liquids and Pasta: Pour in crushed tomatoes, chicken stock, salt, black pepper, and red pepper flakes (if using). Stir well, then add pasta, ensuring it is submerged.
  • Cook Pasta: Bring to a boil, then reduce heat to medium-low. Cover and simmer for 10 minutes, stirring occasionally, until pasta is al dente and liquid is mostly absorbed.
  • Add Cream: Stir in heavy cream and let the sauce simmer for 2 more minutes until thickened.
  • Serve: Remove from heat and serve with grated Parmesan and fresh parsley if desired.

Notes

  • Swap ground beef with ground turkey or sausage for a variation.
  • Use whole wheat or gluten-free pasta as needed.
  • Store leftovers in an airtight container for up to 3 days.
