Ingredients

For the Base:

  • 300g penne pasta
  • 4½ cups water
  • 1 (14oz) can diced tomatoes
  • 1 tablespoon oil

For the Meat & Vegetables:

  • 4 pork sausages (approximately 14oz), casings removed
  • 1 brown onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 red bell pepper, finely chopped

For Finishing:

  • 2oz full-fat cream cheese
  • Salt and black pepper, to taste

Instructions

  1. Sauté the Vegetables:

    • In the same pan, sauté the onion for 5 minutes until softened.
    • Add the red bell pepper and garlic, cooking for another 2 minutes.
  2. Add the Base Ingredients:

    • Stir in the pasta, undrained diced tomatoes, and water.
    • Return the cooked sausage to the pan.
  3. Simmer Until Tender:

    • Bring to a boil, then reduce heat and simmer for 15-18 minutes, stirring occasionally, until the pasta is tender and the sauce thickens.
  4. Make It Creamy:

    • Remove from heat and stir in the cream cheese until fully melted and smooth.
