Description

One Pot Cajun Chicken and Broccoli Alfredo combines tender Cajun-spiced chicken, creamy Alfredo sauce, and broccoli, all cooked in one pot for an easy, satisfying meal with bold flavors and a touch of spice.

Ingredients

  1. 2 boneless, skinless chicken breasts (or thighs), sliced into strips
    1 tablespoon olive oil
1 tablespoon Cajun seasoning (store-bought or homemade)
1 cup broccoli florets (fresh or frozen)
    2 cups chicken broth
    1 cup heavy cream
    1 cup grated Parmesan cheese
12 oz fettuccine pasta (or any pasta of your choice)
    2 cloves garlic, minced
    Salt and pepper, to taste
    Fresh parsley, chopped (for garnish)

Instructions

Cook the chicken: Heat olive oil in a large pot or deep skillet over medium-high heat. Season the chicken with Cajun seasoning, salt, and pepper. Cook the chicken for 5-7 minutes, until browned and fully cooked. Remove and set aside.

  1. Cook the broccoli: In the same pot, add the broccoli and sauté for 3-4 minutes until tender but still vibrant. Remove and set aside with the chicken.
  2. Sauté the garlic: In the same pot, add minced garlic and cook for 30 seconds until fragrant.
  3. Make the sauce: Add chicken broth and heavy cream to the pot, stirring to combine. Bring to a simmer.
  4. Cook the pasta: Add the fettuccine pasta and cook for 10-12 minutes, stirring occasionally, until the pasta is tender and the sauce thickens. Add more broth if needed.
  5. Add the Parmesan: Stir in grated Parmesan cheese until melted into the sauce. Taste and adjust seasoning with salt and pepper.
  6. Combine the chicken and broccoli: Add the cooked chicken and broccoli back into the pot, stirring to combine.
  7. Serve: Garnish with chopped parsley and serve immediately.

Notes

  1. Add vegetables like bell peppers, mushrooms, or spinach for more flavor and nutrients.
  2. For extra spice, add cayenne pepper or hot sauce.
  3. Substitute pasta with gluten-free or whole wheat options for a healthier twist.
  4. For a dairy-free version, use coconut cream and a dairy-free cheese substitute.
