One Pot Cajun Chicken and Broccoli Alfredo combines tender Cajun-spiced chicken, creamy Alfredo sauce, and broccoli, all cooked in one pot for an easy, satisfying meal with bold flavors and a touch of spice.
Ingredients
- 2 boneless, skinless chicken breasts (or thighs), sliced into strips
1 tablespoon olive oil
1 tablespoon Cajun seasoning (store-bought or homemade)
1 cup broccoli florets (fresh or frozen)
2 cups chicken broth
1 cup heavy cream
1 cup grated Parmesan cheese
12 oz fettuccine pasta (or any pasta of your choice)
2 cloves garlic, minced
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
Cook the chicken: Heat olive oil in a large pot or deep skillet over medium-high heat. Season the chicken with Cajun seasoning, salt, and pepper. Cook the chicken for 5-7 minutes, until browned and fully cooked. Remove and set aside.
- Cook the broccoli: In the same pot, add the broccoli and sauté for 3-4 minutes until tender but still vibrant. Remove and set aside with the chicken.
- Sauté the garlic: In the same pot, add minced garlic and cook for 30 seconds until fragrant.
- Make the sauce: Add chicken broth and heavy cream to the pot, stirring to combine. Bring to a simmer.
- Cook the pasta: Add the fettuccine pasta and cook for 10-12 minutes, stirring occasionally, until the pasta is tender and the sauce thickens. Add more broth if needed.
- Add the Parmesan: Stir in grated Parmesan cheese until melted into the sauce. Taste and adjust seasoning with salt and pepper.
- Combine the chicken and broccoli: Add the cooked chicken and broccoli back into the pot, stirring to combine.
- Serve: Garnish with chopped parsley and serve immediately.
