Description

Ingredients

  1. 8 large eggs
    1/2 cup diced bell peppers
    1/2 cup chopped spinach or kale
    1/4 cup diced onion
    1/2 cup shredded cheddar or mozzarella cheese
    Salt and pepper to taste
    1/2 teaspoon garlic powder (optional)

Instructions

Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.

  1. In a large bowl, whisk eggs until well combined.
  2. Add bell peppers, spinach, onion, cheese, cooked meat (if using), salt, pepper, and garlic powder. Mix well.
  3. Pour the egg mixture evenly into the muffin cups, filling about 3/4 full.
  4. Bake for 20-25 minutes, or until the eggs are set and a toothpick inserted in the center comes out clean.
  5. Let cool slightly before removing from the tin.
