Ingredients
- 8 large eggs
1/2 cup diced bell peppers
1/2 cup chopped spinach or kale
1/4 cup diced onion
1/2 cup shredded cheddar or mozzarella cheese
Salt and pepper to taste
1/2 teaspoon garlic powder (optional) 
Instructions
Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.
- In a large bowl, whisk eggs until well combined.
 - Add bell peppers, spinach, onion, cheese, cooked meat (if using), salt, pepper, and garlic powder. Mix well.
 - Pour the egg mixture evenly into the muffin cups, filling about 3/4 full.
 - Bake for 20-25 minutes, or until the eggs are set and a toothpick inserted in the center comes out clean.
 - Let cool slightly before removing from the tin.

- Use different vegetables like mushrooms, zucchini, or tomatoes.
 - Substitute cheese with feta, goat cheese, or pepper jack for variety.
 - Add fresh herbs like parsley, chives, or basil for extra flavor.
