- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
Wet Ingredients
- 2 large eggs, separated
- 3 tablespoons granulated sugar
- 1⅓ cups buttermilk
- ⅓ cup unsalted butter, melted and cooled (plus extra for greasing waffle iron)
- 1 tablespoon pure vanilla extract
- ½ cup Nutella
Instructions
- Preheat the waffle iron: Begin by heating your waffle iron so it reaches the proper cooking temperature.
- Prepare the dry ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set this mixture aside.
- Mix the wet ingredients: Separate the egg yolks and whites into two bowls. To the yolks, add sugar, buttermilk, melted and cooled butter, and vanilla extract. Whisk until the mixture is smooth and well combined.
- Combine wet and dry ingredients: Pour the wet mixture into the bowl with the dry ingredients and gently blend with a large spoon until just combined.
- Whip egg whites: Using an electric mixer, whip the egg whites until stiff peaks form. Carefully fold the whipped whites into the batter without overmixing to maintain lightness.
- Prepare the waffle iron: Lightly grease the waffle iron with melted butter or neutral oil using a pastry brush to prevent sticking.
- Cook the waffles: Spoon about ⅓ cup of batter onto the waffle iron. Add about one tablespoon of Nutella in the center using a cookie scoop. Then drop an additional tablespoon of batter over the Nutella and gently spread it to cover or nearly cover the Nutella layer. Close the lid lightly and cook for about 5 minutes, or until the waffle iron signals the waffles are finished and no steam is visible. The waffles should be light golden brown.
