  • 3 Medium eggs
  • 175 g Self-raising flour

  1. Preheat the Oven: Set your oven to 180°C (350°F) to ensure it reaches the ideal temperature for baking your muffins evenly.
  2. Cream Butter and Sugar: In a large mixing bowl, beat together the unsalted butter and caster sugar until the mixture becomes light and fluffy, which incorporates air to give the muffins a tender texture.
  3. Add Eggs: Beat the eggs into the butter and sugar mixture one at a time, even if the batter curdles slightly. This ensures a smooth and well-emulsified batter.
  4. Incorporate Flour: Gently fold the self-raising flour into the wet ingredients. Careful folding preserves the air in the batter, helping the muffins rise nicely.
  5. Prepare Muffin Tray: Line a muffin tray with 12 cupcake liners and spoon the batter evenly between them, filling each about two-thirds full.
  6. Add Nutella: Warm the Nutella slightly in the microwave for 15–20 seconds if it’s too thick, then evenly distribute dollops of Nutella over the batter in each muffin cup.
