Base
- 200 g Digestive biscuits (crushed)
- 80 g Unsalted butter (melted)
Filling
- 300 ml Double cream
- 400 g Full fat cream cheese
- 200 g Nutella spread
Topping
- 150 g Nutella (melted)
- 50 g Hazelnuts (roughly chopped)
Instructions
- Prepare the Base: Combine the crushed digestive biscuits with the melted butter and press this mixture firmly into the base of a tin. Chill it in the fridge while preparing the topping to allow the base to set.
- Make the Filling: Pour the double cream into a mixing bowl, then add the full fat cream cheese and Nutella spread. Using an electric whisk, whisk the mixture until it becomes very thick, reaching a consistency similar to ice cream.
- Assemble the Cheesecake: Remove the chilled biscuit base from the fridge and spoon the thick cheesecake mixture over it, smoothing the surface evenly with a spatula or the back of a spoon.
- Chill the Cheesecake: Place the assembled cheesecake in the fridge for at least 4 hours to set properly. For best results, chill overnight if possible.
- Prepare the Nutella Topping: Gently warm the 150 g of Nutella in a pan on the stove or in the microwave until it softens slightly but does not become hot. This will make it easier to pour over the cheesecake.
- Add the Topping: Remove the cheesecake from the fridge, still in its tin, and carefully pour the softened Nutella over the top. Smooth the surface gently with the back of a spoon, taking care not to disturb the cheesecake filling underneath.
- Decorate: Sprinkle the roughly chopped hazelnuts evenly around the edge of the cheesecake, adding a crunchy texture and nutty flavor.
- Final Chill: Return the decorated cheesecake to the fridge for at least 1 more hour to allow the topping to set before serving.
