  2. Temper and Cook Egg Yolks: In a separate large bowl, place the egg yolks. Slowly add about 1/2 cup of the hot milk mixture to the yolks while whisking constantly to temper and prevent curdling. Then pour this egg mixture back into the saucepan with the rest of the milk mixture and continue to cook over medium heat for another 5-10 minutes, whisking frequently until the mixture thickens slightly.
  3. Strain and Cool: Prepare an ice bath by filling a large bowl with ice and water. Pour the cooked ice cream base through a fine strainer into another bowl to remove any lumps or cooked egg bits.
