Description

A refreshing No-Bake Triple Berry Pie with a creamy filling, topped with strawberries, blueberries, and raspberries, all in a buttery graham cracker crust.

Ingredients

  1. 1 pre-made graham cracker crust (or homemade)
    8 ounces cream cheese, softened
    1/2 cup powdered sugar
    1 teaspoon vanilla extract
    1 cup heavy whipping cream
2 tablespoons powdered sugar (for whipped cream)
1 1/2 cups mixed berries (strawberries, blueberries, raspberries)
1/4 cup strawberry or raspberry jam (optional, for glazing)

Instructions

Prepare the filling: In a medium bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy. Set aside.

  1. Make the whipped cream: In a separate bowl, beat the heavy whipping cream with 2 tablespoons of powdered sugar until stiff peaks form, about 3-4 minutes.
  2. Combine the filling and whipped cream: Gently fold the whipped cream into the cream cheese mixture until fully combined and smooth.
  3. Assemble the pie: Spoon the cream cheese mixture into the prepared graham cracker crust. Spread it evenly with a spatula.
  4. Top with berries: Gently arrange the mixed berries (strawberries, blueberries, and raspberries) on top of the cream filling, covering the entire surface of the pie.
  5. Optional glazing: To give the berries a beautiful shine, heat the strawberry or raspberry jam in the microwave for about 15-20 seconds until it becomes liquid. Brush the jam over the top of the berries for a glossy finish.
  6. Chill the pie: Refrigerate the pie for at least 3 hours or until the filling is firm and set.
  7. Serve: Once chilled, slice the pie and enjoy this delightful, fruity treat!

Notes

  • For a decorative look, layer the berries on top of the filling instead of mixing them.
  • For a gluten-free option, use a gluten-free graham cracker crust or a crushed cookie crust made from gluten-free cookies.
  • If you prefer a sweeter filling, feel free to adjust the powdered sugar to taste.
  • If using frozen berries, make sure to thaw and drain them well before adding them to avoid excess moisture.
