Ingredients
- 2 cups graham cracker crumbs

- 1 cup powdered sugar

- 1 tbsp lemon juice
- 1 1/4 cups heavy whipping cream

Instructions
Mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press firmly into the bottom of a springform pan to form the crust. Chill for 30 minutes.
- Beat cream cheese until smooth. Add powdered sugar, vanilla extract, and lemon juice, and mix until combined.
- In a separate bowl, whip heavy cream until stiff peaks form.
- Fold whipped cream gently into the cream cheese mixture until smooth.
- Spread filling evenly over chilled crust. Cover and refrigerate for at least 6 hours or overnight until set.
- Arrange sliced strawberries on top of the cheesecake. Warm strawberry jam slightly and brush over berries for a glossy finish, if desired.
- Slice and serve chilled.
