Ingredients
- 200g plain tea biscuits (e.g., Marie, digestive), crushed
- 1/2 cup (1 stick) unsalted butter
- 1/2 cup brown sugar
- 1 can (14 oz) sweetened condensed milk
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1 tsp vanilla extract
- 1/4 tsp salt
- Optional: 1/3 cup chopped nuts, raisins, or shredded coconut
Instructions
Line an 8×8-inch baking pan with parchment paper.
- In a saucepan over medium heat, melt the butter and brown sugar together, stirring until dissolved.
- Add the sweetened condensed milk, spices, vanilla, and salt. Stir continuously for 2–3 minutes until the mixture is thickened and smooth.
- Remove from heat and fold in the crushed biscuits and any optional mix-ins.
- Press the mixture firmly into the prepared pan, smoothing the top with a spatula or spoon.
- Chill in the refrigerator for at least 2 hours, or until fully set.
- Slice into bars and serve. Store chilled for best texture.
Notes
- Use a flat-bottomed glass to press the bars evenly into the pan.
- For cleaner cuts, use a sharp knife dipped in hot water and wiped dry between slices.
