No Bake Pumpkin Balls are easy, wholesome, bite-sized treats made with pumpkin puree, oats, nut butter, and warm spices. Perfect for fall snacking, lunchboxes, or a healthy dessert—no oven required!
Ingredients
- 1 cup pumpkin puree
- 1 1/2 cups old-fashioned oats
- 1/2 cup peanut butter (or almond butter)
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1 1/2 tsp pumpkin pie spice
- 1/4 tsp salt
- 1/4 cup mini chocolate chips (optional)
Instructions
In a large mixing bowl, stir together pumpkin puree, peanut butter, honey (or maple syrup), and vanilla extract until smooth.
- Add oats, pumpkin pie spice, and salt. Mix well to fully combine.
- Fold in mini chocolate chips if using.
- Chill the mixture in the refrigerator for 20–30 minutes to firm up.
- Using your hands, roll the mixture into 1-inch balls.
- Place on a parchment-lined tray and refrigerate until set.
- Store in an airtight container in the fridge for up to 1 week or freeze for up to 2 months.
Notes
- Roll in crushed graham crackers, coconut, or cocoa powder for texture.
- Add chia seeds, flaxseed, or protein powder for extra nutrition.
- Use almond or sunflower seed butter for a nut-free option.
- If too sticky, add more oats. If too dry, add more pumpkin or nut butter.
