Description

No-bake monster cookie energy bites are a delicious and nutritious snack packed with oats, peanut butter, chocolate chips, and a hint of sweetness. Perfect for a quick energy boost or a midday snack.


Ingredients

  1. 1 cup old-fashioned rolled oats
  2. 1/2 cup creamy peanut butter
  3. 1/4 cup honey or maple syrup
  4. 1/4 cup mini chocolate chips
  5. 1/4 cup M&Ms or candy-coated chocolate pieces
  6. 1/4 cup ground flaxseed (optional)
  7. 1/2 teaspoon vanilla extract
  8. A pinch of salt

Instructions

In a large mixing bowl, combine the rolled oats, peanut butter, honey (or maple syrup), and vanilla extract. Stir until well mixed.

  1. Add the mini chocolate chips, M&Ms (or candy-coated chocolate pieces), and ground flaxseed (if using). Mix everything together until the ingredients are evenly distributed.
  2. Using your hands or a spoon, roll the mixture into small bite-sized balls, about 1 inch in diameter.
  3. Place the energy bites on a baking sheet or plate lined with parchment paper.
  4. Refrigerate for at least 30 minutes to allow the bites to firm up.
