Ingredients
- 1 cup old-fashioned rolled oats
- 1/2 cup creamy peanut butter
- 1/4 cup honey or maple syrup
- 1/4 cup mini chocolate chips
- 1/4 cup M&Ms or candy-coated chocolate pieces
- 1/4 cup ground flaxseed (optional)
- 1/2 teaspoon vanilla extract
- A pinch of salt
Instructions
In a large mixing bowl, combine the rolled oats, peanut butter, honey (or maple syrup), and vanilla extract. Stir until well mixed.
- Add the mini chocolate chips, M&Ms (or candy-coated chocolate pieces), and ground flaxseed (if using). Mix everything together until the ingredients are evenly distributed.
- Using your hands or a spoon, roll the mixture into small bite-sized balls, about 1 inch in diameter.
- Place the energy bites on a baking sheet or plate lined with parchment paper.
- Refrigerate for at least 30 minutes to allow the bites to firm up.
- Once chilled, store the energy bites in an airtight container.
Notes
- For a vegan version, use maple syrup instead of honey and a plant-based nut butter.
- For a protein boost, you can add a scoop of protein powder to the mixture.
- If using regular chocolate chips, be aware that they may not distribute as evenly as mini chips.
