Description

These no bake dessert bars combine the natural sweetness of Medjool dates stuffed with walnuts, topped with a toasted flour and honey mixture infused with coconut extract, and finished with crunchy chopped pistachios. Ingredients

Stuffed Dates

  • 26 large soft Medjool dates
  • 26 walnut halves (or scant 1 cup)
  • Extra virgin olive oil, for greasing

Honey Flour Mixture

  • 3/4 cup extra virgin olive oil
  • 3-4 tablespoons honey
  • 1 1/2 teaspoons coconut extract
  • 1 1/2 cups all purpose flour

Garnish

  • 1 cup finely chopped pistachios


Instructions

  1. Stuff the dates: Lightly grease a small glass container or baking dish with olive oil—one that fits all dates in a single layer (such as a 6-cup Pyrex). Gently open each date just enough to remove the pit, then fill the center with a walnut half. Press the sides back together to close and arrange the stuffed dates snugly in the bottom of the container.
  2. Toast the flour: Heat a small non-stick pan over medium-low heat. Stir together the 3/4 cup olive oil and 3-4 tablespoons honey. Add the coconut extract and then gradually stir in the flour. Continuously stir until the flour turns a golden brown color, about 5 minutes, ensuring it doesn’t burn.
  3. Top the dates: Pour the honey-flour mixture evenly over the stuffed dates, filling any gaps. Place the container in the refrigerator and chill until the mixture is fully set, about 20 to 30 minutes.
  4. Finish, chill, and serve: Sprinkle the finely chopped pistachios evenly over the top and gently press them into the mixture with your hands. Carefully cut the dessert into 9 small bars. For best texture, cover and refrigerate for an additional 30 minutes. Remove from the fridge about 10 minutes before serving to soften slightly.
