Description

No bake cookies with old fashioned oats and caramel are chewy, sweet, and indulgent treats made with simple pantry ingredients. Perfect for busy days, parties, or when you want a quick dessert without using the oven.

Ingredients

  1. 3 cups old fashioned rolled oats
  2. 2025 caramel candies (or 1 cup caramel sauce)
  3. 1/2 cup butter
  4. 1 cup brown sugar
  5. 1/2 cup milk or heavy cream
  6. 1 tsp vanilla extract
  7. 1/4 tsp salt

Instructions

Line a baking sheet with parchment paper.

  1. In a saucepan, melt butter, brown sugar, and milk over medium heat, stirring until smooth.
  2. Add caramel candies and stir until fully melted and incorporated.
  3. Remove from heat and stir in vanilla extract and salt.
  4. Fold in oats until well coated with the caramel mixture.
  5. Drop spoonfuls of the mixture onto the prepared baking sheet.
  6. Let cookies cool and set at room temperature for 30–45 minutes, or refrigerate for quicker setting.

Notes

  • For a salted caramel version, sprinkle sea salt on top before cooling.
  • Add chopped nuts, mini chocolate chips, or coconut flakes for extra texture.
  • Quick oats can be substituted, but cookies will be softer.
  • Store at room temperature for up to 3 days, in the fridge for 1 week, or freeze for 2 months.
