Ingredients
- 3 cups old fashioned rolled oats
- 20–25 caramel candies (or 1 cup caramel sauce)
- 1/2 cup butter
- 1 cup brown sugar
- 1/2 cup milk or heavy cream
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
Line a baking sheet with parchment paper.
- In a saucepan, melt butter, brown sugar, and milk over medium heat, stirring until smooth.
- Add caramel candies and stir until fully melted and incorporated.
- Remove from heat and stir in vanilla extract and salt.
- Fold in oats until well coated with the caramel mixture.
- Drop spoonfuls of the mixture onto the prepared baking sheet.
- Let cookies cool and set at room temperature for 30–45 minutes, or refrigerate for quicker setting.
Notes
- For a salted caramel version, sprinkle sea salt on top before cooling.
- Add chopped nuts, mini chocolate chips, or coconut flakes for extra texture.
- Quick oats can be substituted, but cookies will be softer.
- Store at room temperature for up to 3 days, in the fridge for 1 week, or freeze for 2 months.
