Description

No-bake coconut pecan praline cookies are a Southern-inspired treat made with buttery praline, shredded coconut, and crunchy pecans. Quick, easy, and full of caramel-like flavor, they set without an oven for the perfect sweet snack or holiday dessert.


Ingredients

  1. 1 cup granulated sugar
  2. 1 cup brown sugar
  3. 1/2 cup unsalted butter
  4. 2/3 cup evaporated milk
  5. 1 tsp vanilla extract
  6. 1/4 tsp salt
  7. 2 cups sweetened shredded coconut
  8. 1 1/2 cups chopped pecans

Instructions

Line a baking sheet with parchment paper and set aside.

  1. In a large saucepan over medium heat, combine granulated sugar, brown sugar, butter, and evaporated milk.
  2. Bring mixture to a boil, stirring constantly. Once boiling, cook for 3–4 minutes until slightly thickened.
  3. Remove from heat and stir in vanilla extract and salt.
  4. Fold in shredded coconut and chopped pecans until fully coated.
  5. Quickly drop spoonfuls of mixture onto prepared baking sheet.
  6. Allow cookies to cool and set at room temperature for 20–30 minutes until firm.
  7. Serve or store once fully set.
