This No Bake Mounds Roll, also known as Almond Joy Roll, is a decadent, easy-to-make dessert featuring a chocolatey cookie crumb base filled with a rich, creamy coconut and sweetened condensed milk filling. Rolled into a log and chilled, it offers a perfect combination of chocolate, coconut, and sweetness without the need for baking.

Coconut Filling

  • 10 ounces sweetened coconut flakes
  • 1 stick unsalted butter (room temperature)
  • 1/3 cup powdered sugar
  • 1/2 cup sweetened condensed milk


Instructions

  1. Prepare crumbs: If using cookies instead of graham crackers, pulse them in a food processor until fine and crumb-like. Do the same with graham cracker crumbs to achieve a fine, cornmeal-like texture.
  2. Mix base: Transfer the fine crumbs to a large mixing bowl, add cocoa powder, and mix well.
  3. Create syrup: In a small bowl, mix warm water and sugar, then microwave for 1 minute to dissolve sugar completely, forming a syrup.
  4. Combine dough: Add the syrup to the crumb mixture and mix with a fork until combined. Knead the mixture with your hands to form a non-sticky, pliable dough, adding extra warm water one tablespoon at a time if needed, until it resembles play dough.
  5. Roll dough: Place dough on plastic wrap and roll into a thin rectangle approximately 10×12 inches, fixing any breaks by pressing broken pieces back together. Trim the edges with a knife.
  6. Make filling: In an electric mixer or using a hand mixer, beat butter and powdered sugar until fluffy, about 1-2 minutes. Scrape sides, then add sweetened condensed milk and mix until well combined.
  7. Add coconut: Fold in sweetened coconut flakes evenly with a spatula.
