Description
No Bake Chocolate Oatmeal Cookies are quick, chewy, and chocolatey treats made with simple pantry staples—no oven required. Perfect for busy days, warm weather, or easy snacking.
Ingredients
- 2 cups granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 cup unsalted butter
- 1/2 cup milk
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/2 cup peanut butter (creamy or crunchy)
- 3 cups quick-cooking oats
Instructions
Line a baking sheet with parchment paper or wax paper and set aside.
- In a medium saucepan over medium heat, combine sugar, cocoa powder, butter, milk, and salt.
- Bring to a boil, stirring frequently. Once at a full rolling boil, let it boil for 60 seconds without stirring.
- Remove from heat and stir in vanilla extract and peanut butter until smooth.
- Add oats and stir until fully combined.
- Drop spoonfuls of the mixture onto the prepared baking sheet.
- Let cookies set at room temperature for about 30 minutes or refrigerate to speed up the process.
- Once firm, serve or store as desired.
Notes
- Use quick oats for the best texture and cohesion.
- Boil the mixture exactly 60 seconds—too little and cookies won’t set; too much and they’ll be dry.
- Swap peanut butter with nut-free or vegan alternatives if needed.
- Add mini chocolate chips, coconut, or chopped nuts for variation.
- To make bars, press mixture into a parchment-lined pan and cut once set.
