Description

Ingredients

  1. 1 1/2 cups rolled oats
    1 cup grated carrots (about 2 medium carrots)

    1/4 cup maple syrup or honey
    1/4 cup almond butter (or cashew butter, peanut butter)

    1/2 cup pitted dates (soaked in water for 10 minutes, if needed for softness)

Instructions

Prepare the Ingredients: Grate the carrots finely using a box grater or a food processor. Chop the walnuts into small pieces and set aside. If your dates are a bit firm, soak them in water for 10 minutes to soften them.

  1. Blend the Dates: In a food processor or blender, pulse the soaked dates until they form a sticky paste. This helps bind the mixture together.
  2. Combine the Dry Ingredients: In a large mixing bowl, combine the oats, grated carrots, shredded coconut, cinnamon, nutmeg, and salt.
  3. Add Wet Ingredients: To the dry ingredients, add the date paste, almond butter (or nut butter of choice), maple syrup (or honey), and vanilla extract. Stir everything together until fully combined. If the mixture is too dry, you can add a small splash of water or extra maple syrup to help bring it all together.
  4. Form the Bites: Once the mixture is well-combined, scoop out tablespoon-sized portions of the mixture and roll them into small balls with your hands. If the mixture is sticky, dampen your hands with a little water to make rolling easier.
  5. Chill the Bites: Place the carrot cake bites onto a baking sheet or plate lined with parchment paper. Refrigerate for at least 30 minutes to allow them to firm up.
