Description

No bake caramel apple cheesecake is a rich, creamy dessert layered with spiced caramelized apples, a tangy cheesecake filling, and a buttery graham cracker crust—perfect for fall or any time you want a no-fuss, decadent treat.

Ingredients

  1. For the crust:
  2. 1 1/2 cups graham cracker crumbs
  3. 1/4 cup brown sugar
  4. 6 tablespoons melted butter
  5. Pinch of salt
  6. For the cheesecake layer:
  7. 16 oz cream cheese, softened
  8. 1/2 cup powdered sugar
  9. 1 teaspoon vanilla extract
  10. 1 cup heavy whipping cream (or 2 cups whipped topping)
  11. For the caramel apple topping:
  12. 2 medium apples, peeled and diced (Granny Smith or Honeycrisp)
  13. 2 tablespoons butter
  14. 1/4 cup brown sugar
  15. 1/2 teaspoon ground cinnamon
  16. 1/8 teaspoon ground nutmeg (optional)
  17. 1/3 cup caramel sauce (store-bought or homemade)

Instructions

Make the crust: In a bowl, mix graham cracker crumbs, brown sugar, melted butter, and salt until combined. Press into the bottom of a 9-inch springform pan or pie dish. Chill in the refrigerator while preparing the filling.

  1. Make the cheesecake layer: In a large bowl, beat softened cream cheese until smooth. Add powdered sugar and vanilla extract; mix well.
  2. Whip heavy cream to stiff peaks and gently fold into the cream cheese mixture (or fold in whipped topping). Spread evenly over the chilled crust. Refrigerate for at least 4 hours until set.
  3. Make the caramel apple topping: In a skillet over medium heat, melt butter. Add diced apples, brown sugar, cinnamon, and nutmeg. Cook for 8–10 minutes until apples are tender and caramelized. Let cool completely.
  4. Spoon apple mixture over the set cheesecake and drizzle with caramel sauce.
  5. Chill until ready to serve. Slice and enjoy!

Notes

  • Let the apple topping cool completely before adding to avoid softening the cheesecake layer.
  • Use a gingersnap or pecan crust for variation.
  • Cheesecake can be made 1–2 days in advance for best texture and flavor.
  • To make individual servings, layer in jars or ramekins instead of a full-sized pan.
