Description
No-Bake Berry Icebox Cake is a layered dessert featuring graham crackers, homemade whipped cream, and fresh berries that soften together in the fridge to create a light, creamy, cake-like treat without using the oven.
Ingredients
- 14–16 whole graham crackers
- 3 cups heavy whipping cream
- 1/2 cup powdered sugar
- 2 tsp vanilla extract
- 2 cups fresh strawberries, sliced
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- Optional: 1 tsp lemon zest for garnish
Instructions
In a large bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Spread a thin layer of whipped cream on the bottom of a 9×13-inch baking dish.
- Arrange a layer of graham crackers over the whipped cream, breaking pieces to fit as needed.
- Spread a layer of whipped cream over the crackers, then evenly scatter a mix of strawberries, blueberries, and raspberries.
- Repeat the layers—graham crackers, whipped cream, berries—until ingredients are used, finishing with whipped cream and berries on top.
- Cover and refrigerate for at least 4–6 hours, or overnight for best texture.
- Garnish with extra berries or lemon zest before serving.
Notes
- Best made a day ahead so the graham crackers fully soften.
- Use fresh berries for best texture; if using frozen, thaw and drain well.
- Try chocolate graham crackers or vanilla wafers for variation.
- Individual portions can be made in cups or jars for parties.
