Description

No-Bake Berry Icebox Cake is a layered dessert featuring graham crackers, homemade whipped cream, and fresh berries that soften together in the fridge to create a light, creamy, cake-like treat without using the oven.


Ingredients

  1. 1416 whole graham crackers
  2. 3 cups heavy whipping cream
  3. 1/2 cup powdered sugar
  4. 2 tsp vanilla extract
  5. 2 cups fresh strawberries, sliced
  6. 1 cup fresh blueberries
  7. 1 cup fresh raspberries
  8. Optional: 1 tsp lemon zest for garnish

Instructions

In a large bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

  1. Spread a thin layer of whipped cream on the bottom of a 9×13-inch baking dish.
  2. Arrange a layer of graham crackers over the whipped cream, breaking pieces to fit as needed.
  3. Spread a layer of whipped cream over the crackers, then evenly scatter a mix of strawberries, blueberries, and raspberries.
  4. Repeat the layers—graham crackers, whipped cream, berries—until ingredients are used, finishing with whipped cream and berries on top.
  5. Cover and refrigerate for at least 4–6 hours, or overnight for best texture.
  6. Garnish with extra berries or lemon zest before serving.
