Ingredients
- 3 cups long-grain rice
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 2 cloves garlic, minced

- 1/2 cup cooked chicken or beef (optional)
- 2 tablespoons curry powder
- 1 tablespoon thyme
- 2 bay leaves
- 1 teaspoon white pepper (or to taste)
- 4 cups chicken broth
- Salt to taste
- 1/2 cup vegetable or chicken stock
- 1/4 cup green onions, chopped (optional)
Instructions
- Rinse the rice in cold water until the water runs clear. Set aside to drain.
- In a large pot, heat vegetable oil over medium heat. Add onions and garlic, sautéing for 2-3 minutes until fragrant and translucent.
- Add mixed vegetables and bell peppers to the pot, sautéing for 3-4 minutes until slightly tender.
- Stir in curry powder, thyme, bay leaves, and white pepper. Cook for 1-2 minutes to release the spices’ aromas.
- Pour in the chicken broth and stock, bring to a boil. Add the rice, stirring to combine.
- Reduce heat to low, cover the pot, and let cook for 20-25 minutes until the liquid is absorbed and the rice is tender.
- If using cooked chicken or beef, add it to the rice and stir gently.
- Season with salt to taste. Remove the bay leaves before serving.
- Garnish with chopped green onions (optional) and serve hot.
