Description

Niçoise Toast is a vibrant dish inspired by the classic French Niçoise salad, served on a crispy slice of toasted bread. Featuring tuna, olives, tomatoes, hard-boiled eggs, and a zesty dressing, this dish is quick, easy, and perfect for a light meal or appetizer.


Ingredients

  1. 2 slices of rustic or sourdough bread, toasted
    1 can (5 oz) tuna in olive oil, drained
    2 hard-boiled eggs, sliced
    1/2 cup cherry tomatoes, halved
    1/4 cup Kalamata olives, pitted and sliced
    1/4 cup red onion, thinly sliced
    1/4 cup mixed greens (arugula, spinach, or lettuce)
    1 tablespoon capers (optional, for extra briny flavor)

Instructions

Toast your slices of rustic or sourdough bread until golden and crispy. You can toast them in a toaster, grill, or on a stovetop pan.

  1. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey (or maple syrup), dried oregano (if using), salt, and pepper. Taste and adjust the seasoning as needed.
  2. Once the bread is toasted, drizzle a little of the dressing over the top of each slice. Then, layer the ingredients: start with the tuna, followed by the hard-boiled egg slices, cherry tomatoes, olives, red onion, and capers (if using). Top with a handful of fresh greens.
  3. Drizzle the remaining dressing over the top and garnish with additional herbs or a sprinkle of sea salt, if desired. Serve immediately.

Notes

  • For a vegan version, substitute the tuna with roasted vegetables or marinated tofu.
  • Use any type of bread you prefer, such as baguette, ciabatta, or whole wheat bread.
  • Add anchovies for a more traditional Niçoise flavor.
