Description
Neiman Marcus Cake, also known as gooey butter cake, is a rich Southern dessert made with a buttery cake mix base and a gooey cream cheese topping. Simple to prepare yet indulgent, it’s perfect for gatherings, potlucks, or family desserts.
Ingredients
- 1 box yellow cake mix
 - 1/2 cup unsalted butter, melted
 - 3 large eggs, divided
 - 8 ounces cream cheese, softened
 - 4 cups powdered sugar
 - 1 teaspoon vanilla extract
 
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
 - In a mixing bowl, combine cake mix, melted butter, and 1 egg. Stir until a thick batter forms.
 - Press mixture evenly into the bottom of the prepared pan.
 - In another bowl, beat softened cream cheese until smooth. Add powdered sugar, vanilla extract, and remaining 2 eggs. Mix until well combined.
 - Pour cream cheese mixture over the cake base and spread evenly.
 - Bake for 35–40 minutes, until edges are golden but the center is still slightly gooey.
 - Cool for at least 20 minutes before cutting into squares or bars.
 
Notes
- Do not overbake — the center should remain soft and gooey.
 - Refrigerating makes the bars firmer and easier to cut.
 - Try with chocolate, red velvet, or spice cake mix for variations.
 - Add nuts, coconut, or swirl in fruit preserves for extra flavor.
 - Dust with powdered sugar before serving for a classic finish.
