Description

Neiman Marcus Cake, also known as gooey butter cake, is a rich Southern dessert made with a buttery cake mix base and a gooey cream cheese topping. Simple to prepare yet indulgent, it’s perfect for gatherings, potlucks, or family desserts.


Ingredients

  • 1 box yellow cake mix
  • 1/2 cup unsalted butter, melted
  • 3 large eggs, divided
  • 8 ounces cream cheese, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a mixing bowl, combine cake mix, melted butter, and 1 egg. Stir until a thick batter forms.
  3. Press mixture evenly into the bottom of the prepared pan.
  4. In another bowl, beat softened cream cheese until smooth. Add powdered sugar, vanilla extract, and remaining 2 eggs. Mix until well combined.
  5. Pour cream cheese mixture over the cake base and spread evenly.
  6. Bake for 35–40 minutes, until edges are golden but the center is still slightly gooey.
  7. Cool for at least 20 minutes before cutting into squares or bars.

Notes

  • Do not overbake — the center should remain soft and gooey.
  • Refrigerating makes the bars firmer and easier to cut.
  • Try with chocolate, red velvet, or spice cake mix for variations.
  • Add nuts, coconut, or swirl in fruit preserves for extra flavor.
  • Dust with powdered sugar before serving for a classic finish.
