Description

This Nectarine Cobbler is a warm, comforting dessert perfect for showcasing juicy, ripe nectarines. The fruit is gently cooked with sugar and cornstarch to thicken the juices, then topped with a buttery, tender cobbler crust that bakes to a golden perfection. Ideal for serving with vanilla ice cream or whipped cream, this cobbler brings a delightful balance of sweet, tart, and creamy flavors.

Ingredients

For the Nectarine Filling

  • 7 to 8 Nectarines (about 6-8 cups, peeled and sliced)
  • 1/3 cup Sugar
  • 1 Tablespoon Butter (optional)
  • 1 Tablespoon Cornstarch
  • 1 teaspoon Vanilla Extract

For the Cobbler Topping

  • 1 1/2 cups Flour
  • 1 cup Sugar
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 12 Tablespoons (1 1/2 sticks) Cold Butter (cut into cubes)
  • 3/4 cup Heavy Cream or Buttermilk

Instructions

  1. Preheat and Prepare Filling: Preheat the oven to 375 degrees Fahrenheit. Heat a large skillet over medium heat and melt 1 tablespoon of butter, if using. Add sugar, peeled and sliced nectarines, and cornstarch. Stir the mixture and cook for about 7 to 8 minutes until the fruit juices start to thicken. Stir in vanilla extract to enhance the flavor. Transfer this cooked fruit filling into a 2 to 2 1/2 quart baking dish evenly.
  2. Make Cobbler Topping: In a large bowl, combine the flour, baking powder, salt, and sugar. Use a pastry blender, fork, or your hands to cut the cold butter into the flour mixture until it resembles coarse crumbs. Pour in the heavy cream or buttermilk and mix gently until the dough just comes together, being careful not to overmix.
  3. Assemble Cobbler: Drop spoonfuls of the cobbler topping by tablespoonfuls over the nectarines in the baking dish. It’s okay if there are gaps between the dough pieces as they will puff up when baked.
  4. Add Sugar and Bake: Sprinkle the top generously with sparkling or granulated sugar to create a sweet, crunchy crust. Bake in the preheated oven for 38 to 45 minutes or until the topping is a light golden color and the fruit filling is bubbling. If using a smaller baking dish, baking time may be slightly longer.
  5. Serve: Let the cobbler cool slightly before serving. It’s best enjoyed warm, topped with vanilla ice cream or homemade whipped cream for an indulgent finish.

Notes

  • Peeling the nectarines is optional but recommended for a smoother texture.
  • If you prefer a less sweet cobbler, you can reduce the sugar in both the filling and topping.
  • Use fresh nectarines at their ripest for the best flavor.
  • Buttermilk or heavy cream can be used interchangeably in the topping depending on preference.
  • Leftovers can be stored covered in the refrigerator for up to 3 days and reheated before serving.
