Description

Ingredients

  1. 8 large eggs
    1/4 cup milk (dairy or plant-based)
    1 tablespoon olive oil
    1 small onion, finely chopped
    2 cups sliced mushrooms (cremini or button)
    3 ounces goat cheese, crumbled
    2 tablespoons fresh parsley, chopped
    Salt and black pepper to taste

Instructions

Preheat oven to 375°F (190°C).

  1. Heat olive oil in an oven-safe skillet over medium heat. Sauté onion until translucent, about 3-4 minutes.
  2. Add mushrooms and cook until browned and tender, about 5-7 minutes. Season with salt and pepper.
  3. Whisk together eggs, milk, salt, and pepper in a bowl.
  4. Pour egg mixture over mushrooms and onions in skillet. Sprinkle goat cheese on top. Cook without stirring for 3-4 minutes until edges start to set.
