3 ounces goat cheese, crumbled
2 tablespoons fresh parsley, chopped
Salt and black pepper to taste

- Add mushrooms and cook until browned and tender, about 5-7 minutes. Season with salt and pepper.
- Whisk together eggs, milk, salt, and pepper in a bowl.
- Pour egg mixture over mushrooms and onions in skillet. Sprinkle goat cheese on top. Cook without stirring for 3-4 minutes until edges start to set.
- Transfer skillet to oven and bake for 12-15 minutes until set and lightly golden.
- Remove from oven, sprinkle with parsley, slice, and serve warm or at room temperature.
Notes
- Add spinach or kale for extra greens.
- Use feta or cream cheese instead of goat cheese.
- Incorporate herbs like thyme, chives, or basil for flavor variation.
- Add cooked bacon or sausage for a meatier dish.
- Use a well-oiled oven-safe skillet to prevent sticking.
