Ingredients
- 8 large eggs
1/4 cup milk (dairy or plant-based)
1 tablespoon olive oil
1 small onion, finely chopped
2 cups sliced mushrooms (cremini or button)
3 ounces goat cheese, crumbled
2 tablespoons fresh parsley, chopped
Salt and black pepper to taste 
Instructions
Preheat oven to 375°F (190°C).
- Heat olive oil in an oven-safe skillet over medium heat. Sauté onion until translucent, about 3-4 minutes.
 - Add mushrooms and cook until browned and tender, about 5-7 minutes. Season with salt and pepper.
 - Whisk together eggs, milk, salt, and pepper in a bowl.
 - Pour egg mixture over mushrooms and onions in skillet. Sprinkle goat cheese on top. Cook without stirring for 3-4 minutes until edges start to set.
 - Transfer skillet to oven and bake for 12-15 minutes until set and lightly golden.
 - Remove from oven, sprinkle with parsley, slice, and serve warm or at room temperature.
