Description

Ingredients

  1. µFor the mussels:
    2 lbs fresh mussels, cleaned and debearded

    For the fries:
    4 large russet potatoes, peeled and cut into fries
    Vegetable oil for frying

Instructions

Prepare the fries: Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato fries in batches for 4-5 minutes until golden and crispy. Remove from the oil and drain on paper towels. Season with salt and set aside.

  1. Cook the mussels: Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, cooking for 2-3 minutes until softened and fragrant.
  2. Pour in the white wine and broth, stirring to combine. Bring the mixture to a simmer, then add the mussels. Cover the pot and cook for 5-7 minutes, or until the mussels have opened. Discard any mussels that remain closed.
  3. Stir in the butter, parsley, thyme, salt, and pepper. Taste the broth and adjust seasoning if needed.
  4. Serve: Divide the mussels and broth between bowls and serve with crispy fries on the side. Garnish with fresh parsley and lemon wedges for added freshness.
