Instructions
Prepare the fries: Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato fries in batches for 4-5 minutes until golden and crispy. Remove from the oil and drain on paper towels. Season with salt and set aside.

- Pour in the white wine and broth, stirring to combine. Bring the mixture to a simmer, then add the mussels. Cover the pot and cook for 5-7 minutes, or until the mussels have opened. Discard any mussels that remain closed.
- Stir in the butter, parsley, thyme, salt, and pepper. Taste the broth and adjust seasoning if needed.
- Serve: Divide the mussels and broth between bowls and serve with crispy fries on the side. Garnish with fresh parsley and lemon wedges for added freshness.
