Description

A fresh, fruity twist on the classic s’mores—juicy mixed berries and gooey marshmallow sandwiched between crisp graham-style cookies for a bright, summery treat.


Ingredients

  1. 1 cup fresh mixed berries (strawberries, raspberries, blueberries, blackberries)
  2. 68 large marshmallows (or 1 cup mini marshmallows)
  3. 1216 graham-style cookies, digestive biscuits, or thin crackers
  4. Optional: 2 tbsp honey, a pinch of cinnamon, or 2 tbsp chocolate spread

Instructions

Wash and gently pat dry the berries. Slice larger berries so they fit well between the cookies.

  1. On one cookie, arrange a generous layer of mixed berries. Add a drizzle of honey or a thin spread of chocolate if desired.
  2. Place a marshmallow (or mini marshmallows) on top of the berries.
  3. For broiler/oven: Preheat to 350°F (175°C). Place prepared halves on a baking sheet and heat until the marshmallow puffs and turns golden—about 2–4 minutes under the broiler, watching closely.
  4. For campfire/grill: Wrap the assembled halves in foil and warm near the flames or over coals for 3–5 minutes, rotating to avoid burning.
  5. Top with the second cookie, press gently to make a sandwich, and let cool slightly before serving.

Notes

  1. Use sturdy cookies to prevent sogginess from berries.
  2. To keep it lighter, omit marshmallow and use just berries with a drizzle of melted chocolate.
  3. Vegan option: Use vegan marshmallows and plant-based chocolate or omit altogether.
