Delight in these rich and fudgy Mint Chocolate Brownies, featuring a creamy peppermint filling and a glossy chocolate ganache topping. Perfectly balanced with a refreshing mint flavor and deep chocolate, these brownies make a festive and indulgent treat ideal for gatherings or any chocolate lover’s craving.

Ingredients

Brownie Layer

  • 4 ounces unsweetened baking chocolate, chopped
  • 1 cup unsalted butter
  • 4 large eggs
  • 2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder

Mint Filling

  • 1 cup unsalted butter, softened
  • 2 1/2 cups powdered sugar
  • 3 tablespoons milk
  • 1 1/2 teaspoon peppermint extract
  • 4 drops green food coloring

Chocolate Ganache

  • 1 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream
  • 2 tablespoons butter
  • 1/4 teaspoon mint extract

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan with nonstick cooking spray to prevent sticking.
  2. Melt Chocolate and Butter: Combine the chopped unsweetened baking chocolate and 1 cup of unsalted butter in a microwave-safe bowl. Microwave on low power in 30-second intervals, stirring after each interval until fully melted and smooth. Allow to cool slightly while stirring occasionally.
  3. Mix Brownie Batter: In a large bowl, beat the eggs, granulated sugar, and vanilla extract until combined. Gradually add the melted chocolate mixture into the egg mixture while stirring. In a separate small bowl, whisk together the all-purpose flour and baking powder, then gently fold into the chocolate batter just until incorporated—avoid over-mixing to keep brownies tender.
  4. Bake Brownies: Pour the brownie batter into the prepared pan and spread evenly. Bake for 20 to 30 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven and allow to cool completely in the pan.
  5. Prepare Mint Filling: Beat the softened butter until fluffy. Add powdered sugar, milk, peppermint extract, and green food coloring. Mix until creamy and smooth.
  6. Apply Mint Filling: Spread the mint filling evenly over the cooled brownie layer. Place the pan in the refrigerator to chill while preparing the ganache.
  7. Make Chocolate Ganache: In a saucepan or microwave, heat the heavy cream and 2 tablespoons of butter just until it begins to simmer. Pour this hot mixture over the semi-sweet chocolate chips in a bowl. Let sit for a minute, then stir until smooth and glossy. Mix in the mint extract.
  8. Top with Ganache and Chill: Spread the chocolate ganache evenly over the mint layer. Refrigerate for at least one hour, or until the ganache has set firmly.
  9. Serve: Cut the layered brownies into 24 squares. Store leftovers in an airtight container in the refrigerator to maintain freshness.

Notes

  • Do not over-mix the brownie batter to keep the texture fudgy and moist.
  • Allow the brownie layer to cool completely before adding the mint filling to prevent melting.
  • Adjust the peppermint extract according to your preference for mint intensity.
  • For a more vivid green color, add additional food coloring drops gradually.
  • Store brownies refrigerated and consume within 5 days for optimal freshness.
