Description

Mint chip ice cream bon bons are bite-sized frozen treats featuring creamy mint chocolate chip ice cream coated in a rich chocolate shell. Fun, refreshing, and decadent, they’re easy to make, naturally gluten-free, and perfect for hot days, parties, or late-night snacking.


Ingredients

  1. Mint chocolate chip ice cream (dairy or non-dairy)
  2. 1½ cups dark or semi-sweet chocolate chips (vegan if preferred)
  3. 12 tbsp coconut oil (optional, for smoother coating)

Instructions

Line a baking sheet with parchment paper.

  1. Scoop small spoonfuls or use a mini ice cream scoop to form balls of ice cream. Place on the baking sheet.
  2. Freeze ice cream balls for 1–2 hours until completely firm.
  3. Melt chocolate chips with coconut oil in a microwave-safe bowl or double boiler until smooth. Let cool slightly.
  4. Dip each frozen ice cream ball into the chocolate using a fork or skewer. Allow excess to drip off.
  5. Return coated bon bons to the baking sheet and freeze until chocolate is set (about 30 minutes).
  6. Store in an airtight container in the freezer until ready to serve.

Notes

  1. Work in small batches while dipping to prevent melting.
  2. If coating is too thick, add more coconut oil to thin.
  3. For crunch, roll coated bon bons in nuts, cookie crumbs, or coconut before the chocolate hardens.
  4. Let bon bons sit at room temperature for 1–2 minutes before serving if too firm.
