Description
Mint chip ice cream bon bons are bite-sized frozen treats featuring creamy mint chocolate chip ice cream coated in a rich chocolate shell. Fun, refreshing, and decadent, they’re easy to make, naturally gluten-free, and perfect for hot days, parties, or late-night snacking.
Ingredients
- Mint chocolate chip ice cream (dairy or non-dairy)
- 1½ cups dark or semi-sweet chocolate chips (vegan if preferred)
- 1–2 tbsp coconut oil (optional, for smoother coating)
Instructions
Line a baking sheet with parchment paper.
- Scoop small spoonfuls or use a mini ice cream scoop to form balls of ice cream. Place on the baking sheet.
- Freeze ice cream balls for 1–2 hours until completely firm.
- Melt chocolate chips with coconut oil in a microwave-safe bowl or double boiler until smooth. Let cool slightly.
- Dip each frozen ice cream ball into the chocolate using a fork or skewer. Allow excess to drip off.
- Return coated bon bons to the baking sheet and freeze until chocolate is set (about 30 minutes).
- Store in an airtight container in the freezer until ready to serve.
Notes
- Work in small batches while dipping to prevent melting.
- If coating is too thick, add more coconut oil to thin.
- For crunch, roll coated bon bons in nuts, cookie crumbs, or coconut before the chocolate hardens.
- Let bon bons sit at room temperature for 1–2 minutes before serving if too firm.
