Description

This Mint Aero Rice Bubble Slice is a delightful no-bake treat combining crispy Rice Bubbles with smooth white chocolate infused with refreshing peppermint flavor. Topped with melted Aero mint chocolate, it’s a colorful and easy-to-make slice perfect for parties or a sweet snack.


Ingredients

Base

  • 4 cups Rice Bubbles
  • 1 block (approx. 180g) white cooking chocolate
  • 3 drops peppermint extract
  • 4 drops green food colouring (plus extra as needed)

Topping

  • 2 large blocks (approx. 160g each) Nestle Aero mint chocolate


Instructions

  1. Prepare the tray: Line a 20 x 20 cm slice tray with baking paper or lightly grease it for easy removal.
  2. Melt white chocolate: Break the white chocolate block into pieces and microwave in 30-second intervals, stirring in between, until completely melted and smooth.
  3. Mix Rice Bubbles and white chocolate: In a large bowl, combine the Rice Bubbles with the melted white chocolate. Stir well to fully coat the cereal.
  4. Add flavor and color: Mix in the peppermint extract and green food colouring. Continue to add food colouring drop by drop until you achieve your desired vibrant green color.
  5. Press mixture into tray: Pour the mixture into the prepared tray and firmly press it down until evenly compacted. To avoid sticking, lightly oil your hands with non-stick cooking oil while pressing.
  6. Melt Aero mint chocolate: Break the Aero mint chocolate blocks into small pieces. Microwave in 30-second intervals, stirring well between each, until melted. If needed, melt in batches to avoid overcrowding the bowl.
  7. Top the slice: Pour the melted Aero chocolate evenly over the Rice Bubble base and spread it smoothly to cover the top.
  8. Chill to set: Place the tray in the refrigerator and allow the chocolate to set completely, about 30 minutes to 1 hour.
  9. Cut and serve: Once set, cut the slice into squares and serve as a refreshing and crunchy treat.
