Description

Mini popsicles are a fun, customizable treat that’s perfect for warm weather or as a snack. Made with fresh fruit juice, yogurt, and your choice of fruits, these popsicles are both refreshing and healthy.


Ingredients

  1. 1 cup fresh fruit juice (such as orange juice, apple juice, or mixed berry juice)
  2. 1/2 cup chopped fresh fruit (berries, mango, or kiwi)
  3. 1/2 cup plain or flavored yogurt (optional, for creamy popsicles)
  4. 1 tablespoon honey or maple syrup (optional, for sweetness)
  5. 1 teaspoon lemon juice (optional, to add a citrusy kick)

Instructions

In a small bowl, combine your fresh fruit juice and honey or maple syrup (if using), stirring to combine until the sweetener dissolves.

  1. If you want creamy popsicles, add the yogurt and lemon juice to the juice mixture and stir until smooth.
  2. In a popsicle mold, add your chopped fresh fruit pieces, spreading them evenly in the molds.
  3. Pour the juice or yogurt mixture over the fruit in the molds, filling each compartment to the top.
  4. Insert the popsicle sticks into the molds and gently tap the mold on the counter to release any air bubbles and ensure the mixture is evenly distributed.
  5. Place the popsicle mold in the freezer and freeze for at least 4 hours, or until fully frozen.
  6. Once frozen, remove the popsicles from the mold by running warm water over the outside of the molds for a few seconds. Gently pull the popsicles out of the molds.

Notes

  1. For a tropical twist, use coconut water or pineapple juice as the base, and add chunks of tropical fruits like mango, pineapple, or kiwi.
  2. If you prefer a creamy version, use Greek yogurt and mixed berries.
  3. For fun layers, freeze each layer before adding the next to create a colorful and vibrant effect.
  4. Store the leftover popsicles in an airtight container or Ziploc bag in the freezer for up to 2-3 weeks.
