Description

Mini Fruit Pizza Cookies are a colorful twist on the classic fruit pizza, offering a bite-sized, cookie version topped with cream cheese frosting and fresh fruits.

Ingredients

  1. 1 1/2 cups all-purpose flour
  2. 1/2 tsp baking soda
  3. 1/2 tsp baking powder
  4. 1/4 tsp salt
  5. 1/2 cup unsalted butter, softened
  6. 3/4 cup granulated sugar
  7. 1 large egg
  8. 1 tsp vanilla extract
  9. 1/4 cup sour cream
  10. 8 oz cream cheese, softened
  11. 1/2 cup powdered sugar
  12. 1/2 tsp vanilla extract
  13. 1/4 cup heavy cream or milk
  14. Assorted fresh fruits (such as strawberries, blueberries, kiwi, grapes, and raspberries)
  15. Optional: mint leaves for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. In a separate large bowl, beat the softened butter and sugar until light and fluffy. Add the egg, vanilla extract, and sour cream, and mix until fully combined. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  3. Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart. Gently flatten each dough ball into a disc shape using your fingers or the bottom of a glass. Bake for 8-10 minutes or until the edges of the cookies are lightly golden. Allow the cookies to cool completely on a wire rack.
  4. In a medium bowl, beat the softened cream cheese and powdered sugar until smooth and creamy. Add the vanilla extract and heavy cream (or milk), and continue to beat until the frosting is light and fluffy.
  5. Once the cookies have cooled, spread a layer of cream cheese frosting onto each cookie, using a spatula or the back of a spoon to smooth it out evenly. Top with fresh fruit in a decorative pattern, using any combination of strawberries, blueberries, kiwi, grapes, raspberries, or your favorite fruits.
  6. Optionally, garnish with mint leaves for an extra touch of color. Serve immediately or refrigerate until ready to serve. Enjoy the burst of sweetness and freshness in every bite!

Notes

  • If you’re preparing these in advance, wait to add the fresh fruit until just before serving to prevent sogginess.
  • You can use store-bought cookie dough as a shortcut if you’re short on time.
  • For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.
