Description

Mediterranean Scrambled Eggs is a savory breakfast dish made with creamy scrambled eggs, tomatoes, spinach, olives, and feta cheese. This quick and easy meal brings the flavors of the Mediterranean to your table, offering a balanced combination of flavors and textures.

Ingredients

  1. 4 large eggs
    1 tbsp olive oil
    1/2 cup cherry tomatoes, halved
    1/2 cup fresh spinach, chopped
1/4 cup Kalamata olives, pitted and sliced
    1/4 cup crumbled feta cheese
1 tbsp fresh parsley, chopped (optional)
    Salt and pepper, to taste

Instructions

Crack the eggs into a bowl, season with a pinch of salt and pepper, and whisk until well combined. Set aside.

  1. Heat olive oil in a non-stick skillet over medium heat. Add halved cherry tomatoes and cook for 1-2 minutes until softened. Add chopped spinach and cook for another 1-2 minutes until wilted.
  2. Pour the beaten eggs into the skillet with the vegetables. Let them sit for a few seconds, then gently stir with a spatula. Cook for 3-4 minutes, stirring occasionally, until the eggs are just set but still creamy.
  3. Stir in crumbled feta cheese and sliced olives. Cook for another minute, allowing the cheese to melt slightly.
  4. Garnish with fresh parsley (optional) and serve with warm pita or crusty bread.

Notes

  1. For a vegan version, use scrambled tofu instead of eggs and plant-based cheese alternatives.
  2. Feel free to add herbs like basil, oregano, or thyme for extra Mediterranean flavor.
  3. Add cooked chicken or turkey sausage for extra protein.
