Description
Mediterranean Scrambled Eggs is a savory breakfast dish made with creamy scrambled eggs, tomatoes, spinach, olives, and feta cheese. This quick and easy meal brings the flavors of the Mediterranean to your table, offering a balanced combination of flavors and textures.
Ingredients
- 4 large eggs
1 tbsp olive oil
1/2 cup cherry tomatoes, halved
1/2 cup fresh spinach, chopped
1/4 cup Kalamata olives, pitted and sliced
1/4 cup crumbled feta cheese
1 tbsp fresh parsley, chopped (optional)
Salt and pepper, to taste
Instructions
Crack the eggs into a bowl, season with a pinch of salt and pepper, and whisk until well combined. Set aside.
- Heat olive oil in a non-stick skillet over medium heat. Add halved cherry tomatoes and cook for 1-2 minutes until softened. Add chopped spinach and cook for another 1-2 minutes until wilted.
- Pour the beaten eggs into the skillet with the vegetables. Let them sit for a few seconds, then gently stir with a spatula. Cook for 3-4 minutes, stirring occasionally, until the eggs are just set but still creamy.
- Stir in crumbled feta cheese and sliced olives. Cook for another minute, allowing the cheese to melt slightly.
- Garnish with fresh parsley (optional) and serve with warm pita or crusty bread.
Notes
- For a vegan version, use scrambled tofu instead of eggs and plant-based cheese alternatives.
- Feel free to add herbs like basil, oregano, or thyme for extra Mediterranean flavor.
- Add cooked chicken or turkey sausage for extra protein.
