Ingredients
- 2 large cucumbers, diced
3 ripe tomatoes, diced
1 small red onion, thinly sliced
1/4 cup fresh parsley, chopped
1/4 cup extra virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon dried oregano
Salt and freshly ground black pepper, to taste
Optional: 1/2 cup crumbled feta cheese
Optional: Kalamata olives for garnish 
Instructions
In a large bowl, combine diced cucumbers, tomatoes, and sliced red onion.
- Add chopped parsley and gently toss the vegetables together.
 - In a small bowl, whisk olive oil, lemon juice, dried oregano, salt, and pepper to make the dressing.
 - Pour dressing over the salad and toss to coat evenly.
 - If desired, sprinkle with crumbled feta cheese and garnish with Kalamata olives.
 - Serve immediately or chill for 15-30 minutes to enhance flavors.
