Ingredients
- 8 large eggs
1/2 cup milk (dairy or plant-based)
1 cup cherry tomatoes, halved
1/2 cup kalamata olives, pitted and sliced
1/2 cup red bell pepper, diced
1 small red onion, diced
2 cups fresh spinach, chopped
1 cup crumbled feta cheese
2 tablespoons olive oil
1 teaspoon dried oregano
Salt and pepper to taste
Fresh parsley or basil for garnish
Instructions
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Heat olive oil in a skillet over medium heat. Sauté onion and bell pepper until softened, about 5 minutes. Add spinach and cook until wilted. Remove from heat.
 - In a large bowl, whisk eggs, milk, oregano, salt, and pepper.
 - Spread sautéed vegetables evenly in the baking dish. Scatter cherry tomatoes, olives, and half the feta on top.
 - Pour egg mixture over the vegetables and cheese. Sprinkle remaining feta on top.
 - Bake for 35-40 minutes until eggs are set and top is lightly golden.
 - Let cool slightly and garnish with fresh parsley or basil before serving.

Notes
- Add cooked sausage or bacon for extra protein.
 - Use goat cheese or mozzarella instead of feta.
 - Include additional veggies like zucchini, mushrooms, or artichokes.
 - For a spicy kick, add red pepper flakes or jalapeños.
 - Use dairy-free milk and vegan cheese for a dairy-free option.
