Ingredients

  1. 1 pound ground beef
    3 medium zucchinis, sliced
    1 small onion, diced
    2 cloves garlic, minced
    1 cup shredded mozzarella or cheddar cheese
    1/2 cup grated Parmesan cheese
    1 can (14.5 oz) diced tomatoes, drained
    1 teaspoon dried oregano
    1 teaspoon dried basil
    Salt and pepper to taste
    2 tablespoons olive oil

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.

  1. Cook Ground Beef: In a large skillet, heat olive oil over medium heat. Add diced onion and garlic and sauté until translucent. Add ground beef and cook until browned. Drain excess fat.
  2. Add Seasonings and Tomatoes: Stir in oregano, basil, salt, pepper, and drained diced tomatoes. Cook for another 3-4 minutes.
  3. Assemble Casserole: Layer half of the sliced zucchini in the baking dish. Spread half of the beef mixture over zucchini. Sprinkle with half of the shredded cheese. Repeat layers with remaining zucchini, beef mixture, and cheese. Top with grated Parmesan.
  4. Bake: Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10-15 minutes until cheese is bubbly and golden.
  5. Serve: Let cool slightly before serving.
