Description

Matilda’s Chocolate Cake is an ultra-rich, moist chocolate layer cake with creamy chocolate frosting, inspired by the iconic scene in the movie *Matilda*. It’s a show-stopping dessert perfect for any celebration.


Ingredients

  1. 2 cups all-purpose flour
  2. 2 cups granulated sugar
  3. 3/4 cup unsweetened cocoa powder
  4. 2 tsp baking powder
  5. 1 1/2 tsp baking soda
  6. 1 tsp salt
  7. 2 large eggs
  8. 1 cup whole milk
  9. 1/2 cup vegetable oil
  10. 2 tsp vanilla extract
  11. 1 cup boiling water
  12. 1 cup unsalted butter (for frosting)
  13. 3 1/2 cups powdered sugar (for frosting)
  14. 3/4 cup unsweetened cocoa powder (for frosting)
  15. 1/3 cup heavy cream or milk (for frosting)
  16. 1 tsp vanilla extract (for frosting)
  17. 1 pinch of salt (for frosting)


Instructions

Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans and line the bottoms with parchment paper.

  1. In a large bowl, whisk together flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  2. Add eggs, milk, oil, and vanilla extract to the dry ingredients and mix until well combined.
  3. Carefully stir in the boiling water. The batter will be thin.
  4. Divide the batter evenly between the prepared pans.
  5. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  7. To make the frosting, beat the butter until creamy. Gradually add powdered sugar and cocoa powder, mixing well.
  8. Add cream, vanilla extract, and salt, and beat until the frosting is smooth and spreadable.
  9. Frost the top of one cake layer, place the second layer on top, and frost the top and sides of the cake.
  10. Smooth the frosting or create swirls, and decorate as desired.

Notes

  • Use boiling water to bloom the cocoa and enhance chocolate flavor.
  • For an even richer taste, add a teaspoon of instant espresso powder to the batter.
  • Cake layers can be made a day ahead and frosted the next day.
  • To freeze, wrap cooled, unfrosted layers tightly in plastic and foil.
  • Frosting consistency can be adjusted with more cream or powdered sugar as needed.
