The Matcha Avocado Tart combines the earthy flavor of matcha with the creamy richness of avocado. With a crunchy, nutty crust and smooth, vibrant filling, it’s a refreshing and indulgent dessert that’s perfect for health-conscious sweet tooths.
Ingredients
- For the crust:
- 1 cup almond flour
- ¼ cup shredded coconut (unsweetened)
- 2 tablespoons maple syrup or honey
- 2 tablespoons melted coconut oil
- ¼ teaspoon vanilla extract
- A pinch of salt
- For the filling:
- 2 ripe avocados, peeled and pitted
- 1 ½ tablespoons matcha powder (ceremonial grade)
- ¼ cup maple syrup or honey
- ¼ cup coconut milk (or any milk of your choice)
- 1 teaspoon vanilla extract
- A pinch of salt
- 1–2 tablespoons lemon juice (optional, to brighten the flavor)
- For garnish:
- Fresh berries (raspberries, blueberries, strawberries)
- Shredded coconut (optional)
- Matcha powder for dusting (optional)
Instructions
Make the crust: Preheat your oven to 350°F (175°C). In a bowl, combine almond flour, shredded coconut, maple syrup (or honey), melted coconut oil, vanilla extract, and a pinch of salt. Mix until everything is well combined. Press the mixture into the bottom of a tart pan. Bake for 10-12 minutes, or until golden brown. Let the crust cool completely.
- Make the filling: In a blender or food processor, add avocados, matcha powder, maple syrup (or honey), coconut milk, vanilla extract, and a pinch of salt. Blend until smooth. Add lemon juice if you prefer a slightly brighter flavor. Adjust the sweetness and matcha flavor to your liking.
- Assemble the tart: Once the crust is cooled, pour the matcha avocado filling into the tart shell. Use a spatula to smooth the top. Refrigerate the tart for at least 2 hours (or overnight) to set.
- Garnish and serve: Before serving, garnish the tart with fresh berries, shredded coconut, and a light dusting of matcha powder. Slice and enjoy!
Notes
- Store any leftover tart in an airtight container in the fridge for up to 3 days.
- If you prefer a nut-free crust, substitute almond flour with coconut flour or gluten-free oats.
- For a different flavor, add cocoa powder for a chocolate matcha filling.
