Description

Mascarpone Mashed Potatoes are a luxurious, creamy twist on classic mashed potatoes, featuring a rich texture and subtle tang from mascarpone cheese, perfect for special occasions or comforting meals.

Ingredients

  1. 2 pounds Yukon Gold potatoes, peeled and cut into chunks
1/2 cup mascarpone cheese, room temperature
1/4 cup whole milk or cream, warmed
    2 tablespoons unsalted butter
    Salt, to taste
Freshly ground black pepper, to taste
Optional: chopped fresh chives or parsley for garnish

Instructions

Place the potatoes in a large pot and cover with cold water. Add a pinch of salt.

  1. Bring to a boil and cook until potatoes are fork-tender, about 15-20 minutes.
  2. Drain the potatoes well and return them to the pot or a large mixing bowl.
  3. Mash the potatoes using a potato masher or ricer until smooth.
  4. Add the mascarpone, butter, and warm milk or cream to the potatoes.
  5. Stir gently until fully combined and creamy. Add more milk if needed to reach desired consistency.
  6. Season with salt and freshly ground black pepper to taste.
  7. Garnish with fresh herbs if desired and serve warm.

Notes

  1. Substitute mascarpone with cream cheese or sour cream for a different tang.
  2. Add roasted garlic for deeper flavor.
  3. Mix in grated Parmesan cheese for a savory boost.
  4. Stir in fresh herbs like rosemary or thyme.
  5. For a dairy-free version, use plant-based mascarpone and non-dairy milk.
  6. Store leftovers in an airtight container in the refrigerator for up to 3 days.
  7. Reheat gently on stovetop or microwave, adding milk or cream to restore creaminess.
