Ingredients
Dry Ingredients
- 2 ¼ cups (190 grams) fine blanched almond flour, spooned and leveled
- ¼ teaspoon fine salt
- 2 tablespoons sugar (for rolling)
Wet Ingredients
- 6 tablespoons (80 grams) unsalted butter, melted but not overly hot
- ¼ cup (80 grams) maple syrup
- 1 teaspoon vanilla extract
Filling
- 3 tablespoons jam or preserves of choice (raspberry recommended), well stirred
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a large rimmed baking sheet with parchment paper to prevent sticking.
- Mix Dough: In a medium bowl, combine almond flour, melted butter, maple syrup, vanilla extract, and salt. Stir until you achieve a smooth and uniformly blended dough.
- Form Dough Balls: Pour sugar into a small bowl. Using a small cookie scoop or two teaspoons, portion dough and gently roll into balls. Roll each ball in the sugar until evenly coated, then place on the prepared baking sheet spaced about 2 inches apart.
- Create Indentations and Add Jam: Using the back of a teaspoon or your thumb, gently press an indentation into the center of each dough ball. Smooth any cracks around the edges carefully. Fill each indentation with about ½ teaspoon of well-stirred jam. If the jam is stiff, warm it slightly to soften.
- Bake Cookies: Bake for 13 to 15 minutes, or until cookies just start to turn lightly golden around the edges.
- Cool Cookies: Remove from oven and let cool on the pan for 10 minutes. Then transfer to a wire rack to cool completely.
- Store Properly: Store cookies in an airtight container at room temperature in a single layer for up to 7 days. These cookies become more tender over time but are best fresh.
Notes
- Using fine blanched almond flour ensures a delicate, tender texture.
- Be careful not to overheat the melted butter to avoid compromising the dough’s consistency.
- Use a small cookie scoop or measure with spoons for uniform size cookies.
- If jam is too thick, gently warming it makes filling easier and more even.
- Keep cookies spaced adequately on the baking sheet to prevent spreading and sticking.
- These cookies are gluten-free and naturally sweetened, suitable for gluten-free diets.
- Best stored in a single layer to maintain texture and avoid stickiness.
